The menu is based solely on freshly caught seafood from the Ligurian coast and locally grown vegetables. The Bistrot offers a more informal experience, focusing on Piedmontese ingredients, culture, and stories of the region. The main approach chosen by the chefs is respect for the traditions of the region while experimenting and pushing boundaries. 

Ciasa Salares, Dolomites, Italy

Run by the Wieser Family ever since its establishment in 1964, the hotel is well known for its outstanding wine cellar and food experience. Cocun is a wine-cellar restaurant with over 1900 labels, 24,000 bottles from every corner of the world, and a voyage over 1,000 culinary latitudes by the cold cuts, the cheeses, and the 15 dishes prepared with carefully selected ingredients. Nida is the cheese room and boasts a selection of 65 raw-milk cheeses, jams, chutneys, and jellies. Nodla is the chocolate room, where you can dive into a world of no less than 120 different kinds of chocolate. Other dining options include a new Sori Restaurant with the sun-kissed Infiní Eat on Beat Terrace and Bona Lüna Dine Bar – perfect for early-evening aperitifs or after-dinner drinks.

Capri Tiberio Palace, Capri, Italy

Capri Tiberio Palace, the iconic property located just a few steps from Piazzetta, is known also for its fizzy splendid style inspired by La Dolce Vita. At Terrazza Tiberio the Executive Chef Nello Siano offers a new menu inspired by the Mediterranean diet but with an unexpected international flavours.

The menu changes according to the seasons and includes Roman classics with modern twists. Sunday’s lunches are dedicated to Il Pranzo della Domenica when, according to the local market’s offer, Executive Chef Gabriele Muro expresses his creativity at the best.

Maalot, Rome, Italy

Located in the original residence of Gaetano Donizetti, Maalot Roma is primarily a restaurant, and then a hotel. Designed to celebrate life and social gathering, Don Pasquale is set to be an all-day dining experience for locals and hotels guests. Named after one of the most renowned works of Gaetano Donizetti, the restaurant menu pays homage to the tradition and attention to what the new modern food lovers are looking for. Shahs of Sunset’s new season will not disappoint! With the dust finally settling after last year’s devastating fallout, Rezafinds himself feeling ready to dip his toe in the water of reconciliation with his best friend of over 30 years, MJ. And while his relationship with husband Adam is stronger than ever, his friendship with his “brother” Mike is called into question when rumors about Mike’s bad-boy behavior start to swirl. In addition, after a challenging year for MJ, she finds herself in yet another difficult situation trying to make amends with Reza who still has a restraining order against her husband, Tommy. Despite this, the two vow to begin the journey towards forgiveness in hopes of healing their friendship and bringing everyone back together again.

Mike and his girlfriend Paulina’s “perfect” relationship is put to the test when cracks in their union are revealed to the group. Landing himself in the hot seat, Mike ignites another scandal that both tests his own bond with Reza and threatens to break up Reza and GG’s newly reformed friendship. After a long and difficult journey to motherhood, GG is thrilled to introduce her beautiful son Elijah to the world. She proves to be an unexpected unifier and voice of reason among her friends, helping them communicate their hurt feelings and hopefully let go of past grievances. The true test comes when she must apply this new perspective to her own friendship with MJ.

After Nema’s business ventures were hit hard by the pandemic, he faces a crossroad when he is forced to make some difficult decisions. While his relationships with MJ and Mike remain stronger than ever, Nema navigates an uphill battle to repair his friendships with Reza, Destiney and GG in the hopes of bringing his “family” back together. MJ’s new Persian friend London is a welcome breath of fresh air. As a life coach, London has the unique ability to help her newfound friends through difficult situations. When her strategies begin to wear thin, however, London is put to the ultimate test on a group trip where she needs to do more than dole out pep talks if she wants to keep up with the rambunctious crew.

Destiney moves out of her high-rise apartment and into an adorable house across the street from a very familiar face. Still reeling from the chaos of last year, she works to find peace with MJ as she strengthens her bonds with Reza and GG. When Paulina confides in Destiney about relationship issues with Mike, she finds herself entangled in yet another conflict.

Turkey Recipes From Melissa Cookston

No one likes a dry turkey, and Melissa Cookston, celebrity chef and judge on Netflix’s new food show “American Barbecue Showdown,” is here to help avoid ruined Thanksgivings.

Cookston offers up three different recipes for all to enjoy while also touching on the differences between brining and injecting.

Brining vs. Injecting

“The first thing people will say is, ‘You should brine your turkey.’ Yes, brining has many adherents, but I’m not usually one of them. I have always preferred injecting to deliver added moisture and flavor for a few reasons. First, brining a turkey requires a good bit of refrigerated space, generally for a couple of days. Space in the fridge is generally in short supply around the holidays. Secondly, brining has its drawbacks in terms of how it affects (for me at least) the skin and texture of the turkey. Maybe I’ve just not been doing it right, but I’ve just never been a huge fan. I have published brined turkey recipes that were quite good, I thought, but overall, I just prefer injecting a turkey.”

Injecting a Turkey

“When you are going to inject, you can do it right before cooking. You can also put in a different flavor profile than you can when you brine. Also, I’ve had some brined turkeys that were just too salty, and you won’t run the risk of that by injecting.

“You’re going to need an injector obviously. If this is a once-a-year thing for you, then grab an injector from the grocery store for a couple of dollars. They will suffice to get through one turkey a year. If you cook and BBQ more often through the year, you’ll want to invest in a better injector. I have a heavy-duty injector that will make short work of turkeys, pork butts, whole hogs, etc.

“When you inject the turkey, try not to go through the skin too often. I usually work around the skin of the breast as much as possible. If I do go through the skin, I will use it multiple times by injecting through that spot multiple times (at different angles.)”

Turkey Injection Recipes

“I’m attaching some recipes below to help you get started. As you see, you’ll only be limited by your imagination when you inject, so if you want to add some different flavors, knock yourself out. The only caution is making sure you don’t have too large of particles in your injection recipe, or you might clog your needle. These recipes also work great with any poultry, so don’t just save them for Thanksgiving!”

Recipe No. 1

Ingredients

-1 cup chicken stock

-1/2 cup maple syrup

-1 tsp kosher salt

-1/2 tsp white pepper

-1 tsp granulated garlic

-1 tsp soy sauce

-1/2 tsp cayenne pepper

-1/2 tsp chipotle chili powder

-1 tsp hot sauce

Instructions

Add all ingredients to a saucepan and bring it to almost a boil while whisking. Allow to cool before use.

Recipe No. 2

Ingredients

-1/2 cup butter

-1 cup chicken stock

-juice from 1/2 lemon

-1 tsp dried sage

-1/2 tsp garlic powder

-1/2 tsp kosher salt

-1/4 tsp white pepper

Instructions

In a saucepan, heat all ingredients until butter is melted and spices are incorporated. All to cool down. Before it thickens too much, inject poultry in thighs, legs, breasts, and along the breastbone. Allow to sit for 1 hour before cooking.

Recipe No. 3

Ingredients

-1/2 cup lemon juice

-1/2 cup liquid crab boil

-1/2 cup butter

-1 cup chicken stock

-1 tsp hot sauce

-1 tsp cayenne pepper

-1/2 cup olive oil

-1 tsp garlic powder

-1 TBS Cajun seasoning

Instructions

Place all ingredients in a saucepan. Heat until butter is melted and spices are incorporated. Remove and allow to cool to room temperature (it should still be liquid.) Then, inject turkey and place in a pan in fridge for 1 hour before cooking. This will allow injection to spread through the meat.

THAI DISHES

About 24 years ago, Tom Wynter moved from Thailand to America with a dream to open his own commercial enterprise. He started working at Thai Dishes restaurant, the old location. And moved on to a California Pizza Kitchen location for almost a decade and became a licensed bartender where he functioned at a popular bar in Hollywood. After becoming managerial staff at various establishments, he begins to act in tandem with Thai Dishes in Santa Monica when it was located on 2nd Street. The owners decided to call it quits as the rental for their location was coming up for renewal. Wynter decided to extend the legacy of this authentic Thailand franchise and discovered a vacancy at 123 Broadway in Santa Monica which fulfilled his imagination – a restaurant with a bar and patio which mimicked the likes of cafes in Paris. This time around he wanted to make sure that his restaurant had all of the key ingredients which he really felt engaged him as a patron – great food and drinks with a decor to match.

Soon After, Thai Dishes on Broadway was born. An unassuming and unpretentious venue which would be perfect for a quick drink/bite or a spot where you celebrate your birthday. Wynter obviously struck gold being a half block away from Ocean Boulevard, the newly renovated mall and the last stop on the Expo Line. For this area, everything is moderately priced and holds all the right offerings for a romantic date or simply a place to recharge your batteries while you people watch in the sidewalk seating. The ambiance is stellar: mosaic tiling near bar, warm fall colors, bespoke wall paper, faux ostrich wrapped table tops and unique Thai ornaments sprinkled throughout. The most sought after menu items include: BBQ pork over rice, spicy green bean tofu, roasted duck over rice and red curry chicken (presentation is very reminiscent of an authentic Thai dining experience).

Specialty handcrafted cocktails like their Mai Thai cocktails made with Thai whiskey will keep you coming back, but customer service contributed by his general manager, Leila Regalado, is a key component to TDOB’s success. She will have you seated within seconds and constantly will check in to see if you require anything else. If her smile isn’t enticing enough, serving size, happy hour specials and bottomless mimosas on Saturday/Sunday from 12 to 3 pm) should reel you back in.

Wynter asserts, “I’m constantly checking on the quality of food that comes out our kitchen and my staff sometimes needs me during holidays and weekends, which leaves little or no time for a life outside of this place.”

There are many different alcoholic drinks that you can enjoy these days, from premium beers and ales to fine wines, spirits, and liqueurs. Another thing that you can indulge in is one of the wide variety of delicious cocktails, which can be easily created at home. The choice of cocktails that you can rustle up these days is immense with something to suit all tastes and preferences.

Comparing, Contrasting, Cutting, GUINNESS

The Guinness Brewery at St. James’s Gate in Dublin has been brewing beer since its founder, Arthur Guinness, signed his now famous 9,000-year lease on the property on December 31st 1759. The brewery began its life producing ales for Dublin City, it would soon embark on a journey brewing new styles of beer originating in London known as Porter’s and Stout’s. This journey would lead the then small family brewery located on the outskirts of Dublin City to become the largest Stout brewery in the world. Along the 258-year journey that Guinness has undertaken it has been frequently enjoyed at the table alongside a well paired dish.

 

The secret of a good pairing lies in the three C’s, Comparing, Contrasting and Cutting.

 

We will now use Guinness Draught Stout as an example of how to Compare and Contrast the same beer with two different dishes, and examine how the presence of one can interact with the flavor of the other.

 

When Comparing we are required to find foods with similar flavor and intensity to that of the beer. These flavors will then compliment and resonate with each other.

 

For our first pairing, we use Guinness Draught Stout, found in new throw-back cans featuring the Kinkajou, a marketing creation from the 1930’s, 40’s and 50’s by legendary artist John Gilory. Distinctively dark with a rich creamy head, coffee and malty, and the perfect balance of bitter, sweet and roast characters. These flavors are the product of using roasted barley in our brewing and also give Guinness Draught Stout it’s iconic ruby red color. When the barley is roasted at 466 degrees Fahrenheit for 2 and 1Ž2 hours it undergoes a change called the Maillard reaction, a chemical reaction between amino acids and reducing sugars that also gives browned food its distinctive flavor. The flavors from the roasted barley used in Guinness Draught Stout balance wonderfully with the similar rich roasted flavors of an Applewood Smoked Bacon Sandwich with each sip of stout harmonizing with every bite of sandwich until both glass and plate are empty.

 

GUINNESS DRAUGHT & APPLEWOOD SMOKED BACON SANDWICH

 

After looking at Comparing let us now review Contrasting Guinness Draught Stout with a different dish. As we know Stout tastes of coffee and bitter flavors, let us use those to contrast against and accentuate the sweet and creamy deliciousness of a warm Apple and Pear Tart nestled under a generous scoop of Vanilla Gelato. This pairing is very similar to having your cup of coffee with a sweet pastry or confection.

 

GUINNESS DRAUGHT & APPLE AND PEAR TART

 

Finally let’s discuss Cutting. We will utilize Guinness Blonde American Lager as our example for Cutting. Guinness Blonde American Lager, light and hoppy with floral and citrus notes and a long malt biscuit finish. This crisp and refreshing lager has a lively mouthfeel provided by its ample carbonation, this carbonation is ideal for “Cutting” through creamy and juicy dishes and cleansing the palate after each bite. While enjoying a burger at a BBQ or creamy ham and cheese croquettes using this pairing technique, Cutting scrubs the palate and resets your taste buds after each sip.
