Chef Raffaele Ronca

Introducing Winner of The Food Network’s “Chopped,” Chef Raffaele Ronca, Naples-born chef  who left his beloved hometown at the age of 19 and headed for NYC to be more accepted as a gay man. Raff, who initially wanted to be an actor, quickly found success in his “day gig,” working behind the bar and, ultimately, in the kitchen of NYC’s most popular restaurants. His passion for cooking and entertaining eventually eclipsed his desire to pursue acting and led to a lifelong career. His time on the popular Food Network show allowed him to revisit his love of acting, and brought his career to a whole new level. Shortly after his win, he opened Rafele NYC’s West Village, the epicenter of the gay rights movement. The restaurant, Rafele, offered guests an authentic Italian experience and was an immediate success. Just last year, he opened a second location in Rye, New York.

Chef Ronca wholeheartedly believes in giving back to the community and supporting LGBTQ youth. He often donates his time and gifts by appearing at and cooking for various LGBTQ charities, including the Rainbow Railroad, an organization dedicated to helping lesbian, gay, bisexual, and transgender individuals escape violence and persecution in their home countries.

WaiverSign Takes on College Sports Championships

The game was on. The jury was out. This was the real thing. This type of volume had been simulated, but this was now the real world.

Would the newly launched online waiver software, WaiverSign, handle the volume of upwards of 4,000 sports fans signing digital liability waivers almost simultaneously?

Yes! It would. By the end of the weekend, more than 50,000 participants had signed a digital waiver using either the onsite kiosks provided, or via their personal Android or iOS devices.

“WaiverSign is proud to announce the small part they played in the excitement that surrounded the men’s college basketball championships in Minneapolis, Minnesota, earlier this spring,” said Chip Broyles, WaiverSign VP of Business Development and Operations. He was onsite in Minneapolis and monitoring the action.

At one point on the Saturday of the two semi-final games, 4,000 guests signed waivers within 15 minutes. WaiverSign development teams were prepared for the high volume and were standing by at a moment’s notice to react to changing needs if necessary.

“I must admit, at any given time, there can be hundreds, if not thousands of participants going through WaiverSign processes with any number of businesses somewhere in the country. But this was admittedly the first time we had a single client processing that kind of volume all at one time. It was exciting, and a bit nerve racking. But I needn’t have worried. The whole event was a huge success,” Broyles concluded.

In March college hoops fans from around the country descended on US Bank Stadium to cheer on the Michigan State Spartans, Texas Tech Raiders, Auburn Tigers, and the Virginia Cavaliers. Throughout the championship weekend, fan-centered events were held at the Minneapolis Convention Center, about a mile and a half away from the tournament.

Spectators at sporting events don’t always have to sign waivers. In this case, free for all who had a ticket to the big games, or just $10 per person otherwise, the festival activities included scores of interactive events designed to get people hands-on experience with college sports. From batting cages to augmented reality basketball skills, these events excite the public and get everyone geared up for the big games.

“Those who wanted to join in the fun were asked to sign waivers. That’s where WaiverSign came in,” explained Broyles.

Prior to participation in any of the hands-on activities, a Release of Liability waiver must be signed on behalf of each participant. A representative with the company in charge of the activities explained: “We had previously used another white-label waiver signing solution to process participants at the fan events we sponsor throughout the year. We ended up looking for a new vendor that could provide additional functionality, as well as one that fit our budget appropriately. WaiverSign became the obvious choice for us rather quickly.”

“These events are quite popular, as it’s a family friendly environment full of exciting hands-on activities, sponsored giveaways, games and events,” he continues. “Celebrities from the world of college and professional basketball and broadcast sports show up on site for everything from 3-on-3 match-ups to autograph signing and handshaking. Kids as well as adults love it!”

“We’re pleased that the professional sports industry is now enjoying the benefits of presenting waivers digitally rather than on paper,” said Broyles. The benefits of going digital include immediate document retrieval, redundant and secure storage opportunities plus increased document integrity. Digital signature collection also means that companies can gather much more usable data simply because that data is readily accessible and typed and legible — not hand-written.

Using any web-enabled mobile device, parents or legal guardians can immediately sign digital waivers in English or Spanish for their children engaging in youth activities. An Event Management feature communicates to the event organizer and provides easy access to a printable list of names for managing event participants. It can identify and locate groups of people who signed a particular waiver or set of waivers for a certain activity on a specific day.

Lawyers like the fact that through a digital program people have access to documents they can read carefully and sign before they arrive at an activity destination so there’s no last-minute signing situation. The signed document is also delivered with the signer’s email address. The old paper waivers didn’t do that.

Cuba Travel

On June 4, 2019, the Trump Administration announced further restrictions on travel to Cuba, immediately halting cruise ship arrivals and some other forms of travel. Edward Piegza, founder of Classic Journeys, explains the latest rules.

Why should I care about the new Cuba Travel Restrictions?

On Tuesday, June 4, 2019, the Trump administration announced new rules about people-to-people and cruise travel to Cuba. These will affect most Americans traveling to Cuba. If you have plans for such a trip – or have been thinking about making them – you may naturally be confused. Here’s a summary of the changes to the Cuban Assets Control Regulations and the Export Administration Regulations announced by the Office of Foreign Assets Control (OFAC) (the section at the Department of the Treasury that regulates the trade and travel embargo to Cuba and which issues licenses for travel to Cuba) and the Commerce Department, respectively.

Can I travel legally to Cuba with Classic Journeys on its People-to-People programs? 

Yes, indeed. Your travel to Cuba on Classic Journeys’ People-to-People programs is 100% legal because our programs fall under OFAC’s ‘grandfather’ clause. OFAC considers the grandfather clause to apply when a People-to-People organization like Classic Journeys had completed a travel-related transaction prior to June 5, 2019, in connection with a particular departure date, even if, prior to June 5, 2019, you as a traveler had not yet reserved your trip. In other words, because we had already reserved our hotel accommodations for our People-to-People trips in Cuba prior to June 5, 2019, your travel to Cuba on our People-to-People programs is grandfathered in as completely legal.

How do the new regulations affect People-to-People travel?

OFAC has allowed U.S. organizations whose people-to-people programs in Cuba fall under a ‘grandfather’ clause, such as those operated by Classic Journeys, to proceed with those programs through the end of 2019. 

So, what is a qualifying “travel-related transaction” that allows Classic Journeys’ People-to-People programs to Cuba to be legal under the grandfather clause? 

The qualifying “travel-related transaction” that needs to have been completed prior to June 5 could be, for example: having made a reservation for an accommodation (whether or not paid for) or booking and paying for transportation. These are just two examples and are not meant to be exhaustive. In the case of Classic Journeys, our close relationships with local people in Cuba mean that we already had our hotel reservations confirmed prior to June 5.

What People-to-People programs and dates are legal with Classic Journeys under the new regulations? 

All three of our People-to-People programs (Long Weekend in Havana, Cuba for Families: Havana and the Viñales Valley, and Havana Cienfuegos & Trinidad) and all of their departure dates for 2019 are 100% legal.

Can you still fly to Cuba legally on commercial air flights?

Commercial air flights are not affected by the changes. Note that your airline will ask you at the time of ticketing to select from a listing of the type of license under which you are traveling to Cuba legally. Your first choice option for the license will be a “people-to-people” exchange with the “grandfather clause” aka referencing the fact that your People-to-People organization- Classic Journeys – has made its arrangements prior to June 5, 2019. If that option is not available, you can select “educational activities” (so long as there is no mention of a degree requirement). If the airline you are considering does not have one of these options right now, they are likely playing catch up with the new regulations; so you can check back with them in a few days or try one of the many other airlines with commercial flights from the U.S. to Cuba.

How do the new regulations affect cruise travel to Cuba?

The changes have immediately ended travel to Cuba by U.S.-flagged cruise ships or foreign-flagged cruise ships departing from U.S. ports. The Commerce Department has not included a “grandfather” clause to allow cruises that have already been scheduled, and for which passengers have already made arrangements. If you have a paid a deposit or final payment for cruise travel to Cuba, you should contact your cruise company for a refund.

What about private aircraft and boats; can they travel legally to Cuba? 

No. The authorization for private vessels and private aircraft (such as private fishing boats and private sailboats, and corporate or private jets) is revoked.

How will the changes under President Trump affect the people of Cuba?

We’ve made so many wonderful friends in Cuba and seen the lives of the Cuban people change for the better during recent years. So, of course, we’re concerned about what it will mean to their prosperity and general welfare with the enaction of these new travel regulations. The Cubans have been through so much in the last 60 years. They’ve always managed to bear their hardships with grace and warm solidarity in their families and communities.

One known feature of the new regulations is that they will cap remittances – the money that can be sent to Cubans from friends and family members in the U.S. – at $1,000 per person every three months. In a country where the median monthly salary is just $32, you can only imagine how a reduction in remittance income will impact everyday life. In addition, travel had become a major source of income for Cubans, as well, so any reduction in that resource will echo throughout the country in a way for the people who can least afford it and whom we and our government want to help.

We choose guarded optimism.

We are approaching Cuba as we always have – with care, enthusiasm, and with pride in the fact that legal travel for Americans to Cuba has changed the lives of our American guests and the everyday local Cubans they’ve met, in overwhelmingly positive ways. You can still travel to Cuba legally with Classic Journeys. We like to think of this way of travel as an informal version of ‘Voice of America” with boots on the ground… yours in fact, as you communicate a positive story of the American people to local Cuban people. We urge you to hold fast to your plans. And if you’ve been hesitating to plan a Cuba trip, you know now that you can, and we encourage you to do so.

Tuesday, July 9, 2019 — Reem Assil — Reem’s California

In 2010, the dream of Reem’s was born at the doorstep of a street corner bakery in Beirut, Lebanon. The scent of za’atar, yeasted bread, and sweet orange blossom syrup right out of the oven and the sounds of laughter and chatter in Arabic all around Reem Assil conjured up memories of her childhood and yearning to create home and community in the United States. Witnessing the life inside those bakery doors despite the political turbulence outside of them is when she realized her people are masters of bread and hospitality: the lifeline of their history and what has kept them resilient over many generations despite colonization, war, drought, and famine in the Arab world. In the fall of 2016, Reem Assil won the national OpenTable contest to fund their dream restaurant, and six months later, they opened their first brick & mortar location in the heart of Fruitvale in one of the most diverse communities in Oakland. Monday, August 5, 2019 — Alice Waters — Chez Panisse

Alice Waters is a chef, author, food activist, and the founder and owner of Chez Panisse Restaurant in Berkeley, California. She has been a champion of local sustainable agriculture for over four decades. In 1995, she founded the Edible Schoolyard Project, which advocates for a free school lunch for all children and a sustainable food curriculum in every public school. She has been Vice President of Slow Food International since 2002. Her honors include election as a Fellow of the American Academy of Arts and Sciences in 2007; the Harvard Medical School’s Global Environmental Citizen Award, which she shared with Kofi Annan in 2008; and her induction into the French Legion of Honor in 2010. In 2015, she was awarded the National Humanities Medal by President Obama, proving that eating is a political act, and that the table is a powerful means to social justice and positive change. Alice is the author of 16 books including her critically acclaimed memoir, Coming to My Senses: The Making of a Counterculture Cook, The New York Times bestsellers The Art of Simple Food I & II, and The Edible Schoolyard: A Universal Idea.

Wednesday, September 11, 2019 — Suzette Gresham — Acquerello

Acquerello’s co-owner and Executive Chef, Suzette Gresham, has led an incredibly accomplished career, receiving countless awards and accolades. Her achievements, however, have never deterred her from the ultimate goal as a chef — to make her guests happy. Gresham’s enthusiasm in the kitchen and tenacious personality led to the opening of Acquerello with business partner Giancarlo Paterlini in July 1989. Since that time, Acquerello has held a spot every year on the San Francisco Chronicle’s Top 100 Bay Area Restaurant List. The restaurant received its first Michelin star in 2007, and was awarded a second star in 2014. Today, Gresham is known as a pioneer in the culinary industry and has become one of the most influential chefs in the world of Italian fine dining. October 7, 2019 — Kim Alter — Nightbird

Kim Alter is the driving force behind Nightbird and Linden Room, which she opened August 2016 in the bustling Hayes Valley neighborhood as one of the most highly anticipated restaurants of the year. Nightbird, named for Alter’s love of owls, embraces community and diversity, and consistently delivers a hospitable, whimsical experience. Alter showcases the Bay Area’s bounty of produce with layered, flavorful dishes reflecting her commitment to technique, whole animal cooking, and unyielding support of the region’s farmers. Alter earned a Food & Wine Magazine nomination for People’s Best Chef in 2012 and 2013. Monday, November 4, 2019 — Tanya Holland — Brown Sugar Kitchen

Known for her inventive take on modern soul food, as well as comfort classics, Executive Chef Tanya Holland is the owner of Brown Sugar Kitchen. Chef Holland is the author of the Brown Sugar Kitchen Cookbook and New Soul Cooking; was the host and soul food expert on the television series Melting Pot; and competed on the fifteenth season of Top Chef. Hailing from Denver where she cooked in many of the city’s top kitchens, Pam Mazzola first joined Chef Nancy Oakes at San Francisco’s L’Avenue in 1988. Their meeting launched a friendship and culinary partnership that has endured for over twenty years. Mazzola was part of the opening staff of Boulevard and is a co-author with Oakes on the James Beard Award-nominated Boulevard Cookbook. Prospect is a collaboration of Chef Nancy Oakes, Pam Mazzola, and Kathy King from Boulevard Restaurant. As chef/partner in Prospect, Mazzola works closely with the team, guiding the overall direction of the restaurant with a focus on menu development. Located at the base of the Infinity Towers in downtown San Francisco, Prospect features exceptional contemporary American cuisine with local, sustainable, and organic ingredients while hosting diners in a warm and modern urban environment with high service standards.

About Greens Restaurant

Greens Restaurant pioneered vegetarian cooking and paved the way for establishing it as a cuisine in America. In 1979, the San Francisco Zen Center opened Greens to provide an opportunity for Zen students to work together and extend their practice to the workplace. For many years, the entire staff at Greens were Zen students. Founding Chef of Greens, Deborah Madison, was a student at Zen Center for 18 years where she held a host of kitchen positions. In 1981, Annie Somerville joined the restaurant and trained with Madison. Somerville became Executive Chef in 1985, and has since continued to work closely with local growers, cheesemakers, and purveyors, to serve and celebrate seasons and their bounty. San Francisco Zen Center’s Green Gulch Farm provides the restaurant with organic produce year-round from its farm and garden. Green Gulch Farm has been a model of sustainable organic farming and gardening.

Occupying a former Army warehouse in Fort Mason, the restaurant is adorned with floor to ceiling windows and quintessential views of the Golden Gate Bridge, Marin headlands and The Marina. The space was constructed by carpenters from the Zen Center, including lead designer Paul Discoe, an ordained Zen Buddhist priest, using reclaimed wood and recycled material. Central to the familiar dining room are works by local Bay Area artists: a curving three-ton, tour de force of woodcarving, redwood installation by J.B. Blunk, original landscapes hanging on the walls by painter Willard Dixon, and specially made service areas and entryway by designer Jason Lees.

Martina McBride

Martina McBride’s global charity initiative, Team Music Is Love (TMIL), hosted a wildly successful event at The Fairgrounds Nashville on Friday, June 7th to benefit the local community. This event included a food drive, book giveaway and storytelling, a diaper giveaway, and an essential item giveaway, which included items such as tooth brushes and toothpaste.
 
The Nashville Fairground neighborhood was selected as the location for this event due to its status as a food desert in Nashville – most people who live there lack easy access to affordable fruits, vegetables, and whole grains, as the closest grocery store is a two mile walk away.
 
To help, TMIL, in partnership with One Gen Away, brought in a truckload of over 20,000 pounds of locally sourced fresh produce and locally saved canned goods during the food drive, providing approximately 10,000 meals which will feed 380 families. This incredible feat will surely impact the local Nashville community given that 1 in 6 adults and 1 in 5 children in metro Nashville are food insecure – meaning they lack reliable access to nutritious food and may survive from fast food and convenience stores.
 
TMIL also partnered with The Word Wagon to give summer reading books to kids – two low income Nashville metro schools will receive free books – and partnered with the Nashville Diaper Bank to give diapers to families in need.
 
Of course, this event wouldn’t have been a success without the help of volunteers. People from 20 different states and 3 different countries showed up to help give away flowers, balloons, lemonade, and fill grocery carts with fresh foods and canned good staples.
