Premier Boutique Heli-Skiing Operator Takes Action on Climate Change by Taking a Hard Look at its Operations and Offsetting its Carbon Footprint

Northern Escape Heli-Skiing (NEH) has recently become one of the first carbon-neutral heli-skiing operators in the world. The operator partnered with Synergy Enterprises and Offsetters, Canada’s leading carbon management agency, to take action on climate change and offset its current carbon footprint. NEH purchased offsets that benefit The Great Bear Forest and the First Nations living in the region, as well as the Lara Ceramic plant-based in Brazil by helping to decrease deforestation in the area.

In addition, the operator has a three-year plan to reduce its greenhouse gas emissions and adopt renewable energy sources, such as solar panels and electric vehicles to support its operations. LUCIA RESTAURANT & BAR CELEBRATES SUMMER WITH A PLANT-BASED BASH

NEW COLORS OF THE SEASON MENU FOCUSED ON GREEN, GORGEOUS & GASTRONOMIC

America’s love affair with the garden has exploded with 9.7 million people now fully immersed in a plant-based diet. In fact, 2021 is projected to be THE year this diet finally goes mainstream. From plant-based beverages to meatless burgers, this trend has no signs of slowing given the benefits to both one’s body and the environment. Riding this wave, chef Cal Stamenov is culling beets, chard, asparagus and fresh fava from the Lodge’s two-acre organic garden to debut the new Colors of the Season menu. Served in addition to the la carte and five-course tasting menu, Colors of the Season is available June 1 through July 31, 2021; prices range from $16 to $36.

NATURE’S BOUNTY

Crafting vegetable-driven dishes requires equal parts timing and finesse. Picked at their peak, kale, sweet peas, chard and fresh fava share short lifespans. Coaxing their distinct flavors while marrying ingredients into a leafy risotto, humble ratatouille or goat cheese terrine is an art. Take the elevated Red Striped Beet Spring Roll, a visual stunner with pops of cilantro, olives and creamy avocado, balancing texture and flavor for a full palate immersion. Purple Cauliflower Soup, blending purple basil and purple radish with fresh black beets puts a colorful spin on comfort food.

Other starters include lip-smacking Local Asparagus, steamed with saffron couscous, curly purple mustard and a passionfruit emulsion. The Backdoor Avocado Salad, spotlighting fruit culled from nearby Salinas Valley, delivers a mélange of quinoa, heirloom tomatoes, fennel and fresh basil lightly dressed in Meyer lemon-olive oil with a dusting of Big Sur Sea salt. There is also a spin on crudité, with the Colorful Pickled Veggies Around and an ethereal Beautiful Strawberries, pairing arugula, lemon confit and aged balsamic with a dollop of fluffy Italian burrata.

Green Gazpacho makes a showing on the new menu, with a deft blend of celery, cilantro, avocado and piquant Padron peppers. The Leafy Green Risotto, focused on kale, Swiss chard, spinach, chervil and fresh fava is a flavor explosion, as is the Portobello Wellington, stuffed with zucchini, kale, goat cheese and pine nuts with a rich butternut squash sauce. Corn hounds will love the Agnolotti Pasta, prepared with fresh yellow corn, just-picked sweet peas and shave or two of Australian black winter truffles. Rounding out the menu is a Stuffed Rainbow Chard, easy on both the eyes and palate, pairing green lentils du puy, zucchini, brown rice and goat cheese.

SOURCING SUPERFOODS

The switch to a plant-based diet is not a fad. According to Gallup, 77 percent of Americans have reduced their meat consumption in the past 12 months, with almost six in 10 Americans reporting transitioning to a more flexitarian or semi-vegetarian diet. This bodes well for chefs who have long refined their craft in this category.

There is no shortage of benefits for those who aligned with a vegetable-forward diet. According to Everyday Health, the nine scientific benefits from following this menu regimen include lower blood pressure, reduction in cardiovascular disease, weight loss, reduction in Type 2 diabetes, stroke and risk of cancer, and issues surrounding cholesterol. Living longer is another key benefit. The Journal of the American Heart Association study found that a plant-based diet lowers the risk of all causes of mortality by 25 percent. Finally, the noted benefits to the brain, largely due to polyphenols which are known to slow the progression of Alzheimer’s disease and cognitive decline. Las Vegas-Based Tour Provider

When Bindlestiff Tours owner Rachel Urban opened the Las Vegas-based adventure tour company nearly 10 years ago, she sought to offer adventurers the most immersive experiences throughout the Southwestern United States, Alaska and Western Canada. In the days leading up to the pandemic, Bindlestiff Tours was doing just that. Business was booming and the company welcomed thousands of international visitors each year.

Then borders closed, shutdowns began and the international tourism industry dried up. As reservations were cancelled and trips delayed, many tour operators opted to close their doors entirely. Yet, Bindlestiff made the bold, yet tough, decision to remain open last year as one of the only fully operating national park tour companies in Las Vegas during the height of the pandemic. Today, Bindlestiff continues to fight challenges created by the pandemic while still welcoming drive-market travelers to keep the business afloat.  

“Like many small businesses in the tourism industry, we’re fighting every day to keep our operation running while safeguarding our staff and customers’ health and well-being,” said Urban. 

With group size limits, mask enforcement rules and social distancing guidelines differing state by state, Bindlestiff’s high operating and cleaning costs for their spectacular multi-state tours through Nevada, Arizona, Utah and California have risen while the number of guests they are able to accommodate continues to remain restricted. 

Navigating which national parks and campsites are open also presents another obstacle for Bindlestiff Tours. A spike in COVID-19 cases often leads to sudden park or campsite closures or limited access to certain destinations which creates challenges in how Bindlestiff times tours, according to Urban.

Last-minute tour reservations and cancellations also add to the company’s dilemma of planning how many guests they are able to welcome on a given day. 

“While it certainly has been difficult to accommodate travelers visiting Las Vegas on a whim, it brings us such gratitude knowing there are still domestic tourists searching to get away and immerse themselves in nature,” said Urban. 

The immersive tour operator celebrates the small victories such as welcoming travelers from neighboring states, even if group sizes remain small, and continues to offer flexible booking conditions, value tour pricing and additional traveler options.

The self-drive camping tours, also available with hotel upgrades, offer travelers an opportunity to socially distance under the stars. According to Urban, these tours are designed for guests interested in driving to the national parks of the American Southwest on their own, while still receiving expert guidance and an immersive, personalized adventure. 

Guests are provided with all the necessary camping equipment and tour guides assist with camp set-up in scenic locations. Expert tour guides meet guests at key locations throughout the tour and escort groups on remote hiking trails to spectacular viewpoints while providing live interpretive wildlife and nature content throughout the adventure. 

According to Bindlestiff, guides also facilitate evening campfires and locally sourced, fully catered al fresco dining options at camp or for hotel guests. 

To enhance the self-drive experience, Urban says guests can download the recently reconfigured Bindlestiff Tours mobile app. Now featuring tour narrations in English for domestic travelers in addition to multiple languages for international visitors, the app allows travelers to access additional details, instruction and information.


For families or groups of friends of four or more interested in experiencing national parks in a more intimate setting, Bindlestiff also offers private, custom tour options. These tour packages are pre-made and offer exclusive one-on-one attention from a dedicated, expert local guide. The Quail, A Motorsports Gathering brought together automobile and motorcycle enthusiasts from around the world. The event began in 2003 in Carmel, California and is located at the Quail Lodge and Golf Club. The gathering had a limit of 5,000 people and a ticket lottery system, which is probably why it is now one of the most popular events in Monterey Car Week. Los Angeles natives drove over five hours for this event. However it was closer to San Francisco at just a little over two hours.

The exhibit area stretched the length of 1-2 football fields and at the entrance, you were handed a glass of champagne. Tickets included parking, a collectible event poster and magazine, a gourmet lunch, fine wine and speciality cocktails. Alongside the handcrafted cocktails were culinary stations throughout the exhibition.

One of the most intriguing exhibits included Infiniti and Lexus as well as the Ferrari presentation of parked cars. The Robert Graham lifestyle and apparel brand made an appearance as well. There was also a show titled The Spirit of the Mille Miglia. This highly influential event celebrated its sixteenth year on August 24, 2018 and has many more to come.

Sponsors provided luxury cars that guests were allowed to test drive on select courses. American Cut Pop-Up at the US Open
