Father’s Day Recipes

This year to celebrate Father’s Day, Martell & culinary collective Ghetto Gastro have teamed up to create delicious recipes to pair with your favorite Martell drink.

Inspired by experiences with their own fathers and families, Ghetto Gastro set out to craft bold recipes easy enough for anyone to whip up ahead of their Father’s Day meal. Chef P.’s “Green is for the Money, Gold is for the Honey” Curry Fried Rice dish was inspired by his own father’s Barbados heritage and reflects how Bajans traditionally prepare the dish. The second dish, the Blistered Prawns, was inspired by Chef Malcom’s trip to Singapore.

Both dishes pair well with Martell Blue Swift, served on its own or over ice, to create a bold statement, exactly how Martell likes it. Here are two unique and international recipes that will be sure to impress all guests at your Father’s Day dinner.

“Green is for the Money, Gold is for the Honey” Curry Fried Rice

Curry, Martell Cognac, 360 Magazine, Vaughn Lowery

Ingredients:

  • 15g ground black pepper
  • 5g ground white pepper
  • 5g ground cardamom
  • 5g all spice
  • 45g madras curry powder
  • 30g canola or other neutral oil
  • 90g coconut oil
  • 2 shallots, peeled and diced
  • 2 garlic cloves, peeled and minced
  • 30g soy sauce, plus additional as needed
  • 15g honey
  • chiles, seeded and minced
  • 3 cups cooked white rice, cooled
  • 2 limes, 1 juiced and 1 quartered
  • 1/2 cup crushed pistachios
  • 28g dried mushrooms
  • 400ml hot water
  • 50ml soy sauce
  • 45g agave
  • 10g red miso
  • 10g ginger, grated
  • 20g cornstarch
  • 20g water

Vegan Oyster Sauce

  1. Put the dried mushrooms into a container and put the hot water over the mushrooms, making sure they are fully submerged.
  2. Let the mushrooms soak for at least an hour.
  3. Add the mushrooms and the soaking liquid to a blender and blend until smooth.
  4.  In a medium sauce pan add the mushroom mixture, soy sauce, agave, miso and ginger and bring to a simmer.
  5. Reduce heat to low and cook until the mixture begins to thicken (about 8 mins).
  6. Mix together cornstarch and water and add to the pot cooking down for 5 minutes or until thickened.
  7. Allow to cool and refrigerate for up to 2 months.

Rice

  1. Place a large skillet over medium heat the cardamom, all spice, black pepper and white pepper. Toast, shaking the pan occasionally, until fragrant, about 1 minute. Add the curry powder, shake again and toast for 1 minute more. Scrape the toasted-curry-powder blend into a small bowl using a rubber spatula, and set aside.
  2. Add the oils to a skillet and when they melt, add the shallots and garlic. Lower the heat, and cook, stirring frequently, until the shallots are soft and translucent, 5 to 8 minutes.
  3. Raise the heat to medium. Stir in the toasted-curry-powder blend, followed by 2 tablespoons soy sauce, 1 1/2 tablespoons vegan oyster sauce and the honey. Cook, stirring occasionally, until thickened, 3 to 5 minutes. Add chilies to taste, then adjust the levels of soy sauce and oyster sauce if you want to go a little saltier or sweeter. Scrape the curry paste into the small bowl.
  4.  To finish the dish, add the 2 tablespoons of Miyokos to the skillet, and heat over medium-high. When the butter melts and foams, flake the rice into it, and allow it to crisp slightly, then stir a few heaping tablespoons of curry paste into the rice to season to taste. Finish with chopped pistachios and lime juice to taste.
  5. Serve with lime wedges alongside blistered prawns or on its own.
  6. Transfer remaining curry paste to a lidded container. Let cool, cover and refrigerate up to 1 month.

Blistered Prawns with Lime, Garlic, and Cilantro Butter Sauce

Prawns, Martell Cognac, 360 Magazine, Vaughn Lowery

Ingredients:

  • 12 Wild caught Prawns or Shrimp with shells on
  • 500 grams Olive oil
  • 140-150 grams garlic200ml lime juice
  • 2 additional limes plus, save zest
  • 40ml orange juice
  • 1/2  tsp crushed red pepper flakes
  • 4 sprigs lemon thyme
  • 25- 50 grams butter (preferably 83% butterfat)
  • Himalayan or sea salt of your choice to taste

Garlic Sauce

  1. Preheat your oven to 170°C
  2. In a cast iron skillet or other ovenproof pan, add the olive oil and crush the garlic with a garlic press. Make sure that the olive oil is completely submerged.
  3. Cook in the oven until garlic is golden brown, about 45 minutes.
  4. Remove from the oven, carefully stir in both citrus juice and return to the oven to cook and slightly thicken, about 15 minutes.
  5. Carefully remove from the oven and let cool slightly. Stir in the lemon thyme and red pepper flakes, taste and season with salt. The sauce will not emulsify; it will be very oily, and should be stirred before use.

The Prawns

  1. Start by rinsing them in cold water and discarding any that are discolored or slimy.
  2. If you choose to remove heads, hold the body of the prawn with one hand and firmly twist off the head using your other hand, lightly dry them and place in a bowl.
  3. Stir the oil and scoop out about 2-3 tablespoons of the garlic from oil and toss with the shrimp. Marinate the shrimps for a few hours or overnight.
  4. Mix about equal parts sea salt and lime zest together, reserve in the fridge. Make this right before you cook your shrimp.
  5. Remove the prawns from the fridge, squeeze the juice from two limes over, and stir to combine.
  6. Heat a skillet over medium to high heat, add the shrimps and sauté turning constantly for about 2 minutes, then add some more of the mixed up garlic sauce to the pan and continue cooking to blister fry the shrimps until aromatic, bright red, and caramelized.
  7. Add the butter and lemon thyme, place a lid on top and shake vigorously to finish cooking the shrimps, you should hear the lemon thyme start to crackle and pop from hitting the hot oil in the pan. Season with lime salt well and transfer to a bowl.

Chiron Pur Sport Preview

H.R. Owen Bugatti London played host to the UK’s only customer previews of the purest Bugatti ever: the all-new Chiron Pur Sport. Opened in 2016, the H.R. Owen-operated site is the UK’s sole official Bugatti retailer, nestled among the exclusive boutiques and ateliers of London’s Mayfair district.

Unveiled earlier this year, the Chiron Pur Sport is limited to only 60 vehicles. With technological improvements to the chassis, gearbox and engine, it is the most agile and most uncompromising Chiron ever. Cutting-edge new additions, including lightweight exhaust tailpipes made of 3D-printed titanium and magnesium wheels, help to cut weight and improve performance. The interior is deliberately focused and raw; extravagances are reduced to the bare minimum. Many surfaces normally clothed in leather are upholstered in lightweight Alcantara in order to reach maximum weight reduction and dynamic patterns have been lasered onto the door panels with contrasting fabric highlights with a metal look. Bugatti engineers radically changed the chassis set-up and developed a new gearbox, all in all the gears have been shortened by 15%, guaranteeing more dynamic handling and further improved power distribution. This means that it accelerates in sixth gear from 60 to 120 km/h three seconds faster than the Chiron. The car is fitted with newly developed Michelin Sport Cup 2 R tyres as to ensure maximum cornering speeds.

Los Angeles Protests

Los Angeles residents continue their demand for racial equality

Breonna Taylor, a Louisville EMT, would have turned 27 years old on June 5th. Instead, on March 13th, Ms. Taylor was shot 8 times while asleep after police officers entered her home without knocking. The young woman was not forgotten at Friday evening’s LA protest. The administrators of the march passionately expressed how this case of police brutality is emblematic of the chronic racial inequality which has defined the US criminal justice system since the nation’s conception.

The atmosphere of the march was boisterous. The Five Stairsteps’ “O-o-h Child” played at the event and defined the hope for a better future omnipresent with lines like, “things are gonna get easier… things are gonna get brighter.”  Protestors fed off each others’ energies with chants of “No Justice, No Peace,” “Whose streets? Our streets,” mixed with an eclectic concoction of cheers. Indeed, the emphatic beeps of car horns, the banging of pots and pans from apartments above the street, and a sea of signs created a powerful spirit that, in the moment, felt indomitable.

One of the most inspiring aspects of the protest was the mélange of ethnicities in attendance. The multicolored faces of the crowds formed a microcosm of America – a new America. This diverse movement circled downtown Los Angeles, walking past boarded-up businesses that still bore the scars of previous nights. Much to the credit of the protest’s organizers, they were determined to reject the vandalism that had wounded the essence of the movement’s message earlier in the week. They wished to emulate Dr. Martin Luther King Jr.’s tactics of non-violence, aspiring to make progress in King’s fight that must still advocated for.

At several points throughout the protest attendees were asked to take a knee. The profound purpose of this act was revealed at the conclusion of the event. “It’s uncomfortable isn’t it?” asked one protest organizer stuttering on her own passion, “Well imagine what it felt like for George Floyd for 8 minutes and 46 seconds!” Her vehemence echoed throughout the crowd as applause ruptured the silence of intent listening.

As the California sun dipped below the horizon, thousands ascended upon City Hall where a vanguard of LAPD lined the entrance. The protestors were nourished by a plethora of free snacks provided by supportive local vendors. The march culminated with a moving tribute to Ms. Taylor on the steps of City Hall. Here, the crowd sang “Happy Birthday” to yet another martyr of the African American community in what appears to be an endless struggle for equality. Stories like Breonna Taylor’s tell a hauntingly familiar tale of racism in our country, and these injustices haven’t ceased during quarantine. The 360 Magazine “Minority Report” details all of the acts of racial inequality during the COVID-19 pandemic.

The crowd was rife with enthusiasm for change but there was also a portentous understanding that this is not the last march for justice. However, the prevailing attitude was one of passion in hope that, despite the brutality of US history, America has finally reached a social crescendo free of the injustice that has characterized the country’s nascence.

So, what does all this mean? Well, the protestors and organizers were eager to proclaim a sizeable achievement they have garnered thanks to this movement. One of which is LA Mayor Eric Garcetti’s revision of the proposed city budget. In this revision, $150 million from the LAPD will be diverted towards healthcare, jobs, and education opportunities in communities of color. It is unclear whether stripping funds from the police will make the streets safer for people of color, yet protestors saw this as a victory for the Black Lives Matter movement.

The push to reduce police power will undoubtedly clash with President Trump’s call for “law and order.” Trump’s adoption of the infamous Nixonian verbiage and allusions to “vicious dogs” and “ominous weapons” has inflamed tensions in Los Angeles. In general, the president’s responses to BLM movements have done little to soothe California’s most populous city. A city, that only 28 years ago, was the epicenter of mayhem after a jury acquitted four police officers of using excessive force against black LA resident Rodney King. Thus, almost 30 years after the Rodney King riots and 50 years after the civil rights movement, one is still left wondering: do Americans trust law enforcement?

Step by step and in strict compliance with measures to fight the pandemic, various sectors of the tourism industry have begun to reopen, starting with hotels.

Several hotels are opening up to guests, such as Hôtel de Paris Monte-Carlo, Hôtel de France, and Hôtel Fairmont Monte-Carlo. They are all focusing significant attention on the health, well-being, and safety of their guests as COVID-19 precautions will remain crucial to the Monaco community.
