Eataly will welcome Toscana Ristorante & Bar by Eataly to its Las Vegas location at Park MGM on Wednesday, May 18. Defined by classic Tuscan cuisine, an expertly-curated wine list, and an inventive cocktail program, the immersive restaurant celebrates the rich experience of the Tuscan countryside coupled with Las Vegas’ vibrant energy.

“With this new concept, we’re honoring the legendary region of Toscana, known for its stunning landscapes, incredible art, and hearty dishes made with simple, high-quality ingredients,” said Alex Saper, Business Partner of Eataly USA. “We’ve built an authentic, flavorful menu paired with tableside moments for a fun and elevated Italian experience.”

Nestled within Eataly’s marketplace, Toscana occupies an intimate dining room inspired by the famous gardens and historic architecture of its namesake region. Upon entering the 94-seat eatery set behind ivy-covered arches, guests are welcomed with an open woodfire grill and contemporary Tuscan-style decor, offering a convivial atmosphere reminiscent of the Tuscan countryside. 

The menu features classic dishes that emphasize Tuscany’s ancient culinary heritage and take guests on a sensory journey through the streets of Florence. Over centuries, cooks perfected recipes born from peasant traditions like Ribollita, the staple Tuscan comfort dish of stewed beans, and Ravioli Maremmani, pillowy pasta squares filled with ricotta and spinach and topped with Così Com’è tomato sauce. The Bistecca “alla Fiorentina” (meaning cooked Firenze-style), is not to be missed –– prepared according to strict guidelines, the porterhouse steak has an artfully seared exterior crust and a perfectly-cooked interior.

The Instagram-worthy cocktail menu features beloved classics with Las Vegas flair, like creative takes on the infamous Old-fashioned and the Corpse Reviver No. 2. Highlighted on the menu is the Negroni Toscana where guests are invited to build their own cocktail with a selection of gin, bitters, and vermouth. There’s even a Not Not Negroni section for variations on the Italian classic like a Boulevardier, where whiskey replaces gin.

No Tuscan meal would be complete without an extensive wine collection. From the western shore regions of Bolgheri to the historic villages of Chianti and Montalcino, guests are invited to take a 700 year journey through Tuscany’s noble winemaking legacy with a selection of over 450 Italian wines and over 30 wines by the glass.

After dinner, guests can choose from an impressive dolce selection or house-made gelato served tableside with an array  of toppings like Fabbri Amarena cherries and flourless chocolate crumble. Adventurous guests can also explore a large amaro and grappa selection for an after-dinner digestivo. At the conclusion of service, all guests are invited to try housemade cantucci, a traditional Tuscan almond cookie.

Toscana Ristorante & Bar by Eataly is adjacent to Gran Caffè Milano at Eataly Las Vegas at Park MGM. The venue will be open Wednesday to Sunday from 5 p.m. to 10 p.m. for dinner service.
