The Paolo Rovagnati Collection is intended to appeal to various tastes. Paolo Rovagnati’s History

Rovagnati has left an indelible mark on the world of Italian prosciutti with his enthusiasm for invention and attention to excellence. This 100% Italian enterprise based in Lombardy specializes in creating premium, high-quality prosciutto cotto (cooked ham) and other cured delicacies like Salame Felino.

Rovagnati’s story begins in the little town of Biassono, in the northern Italian region of Lombardy, in the year 1941. In order to meet the need for high-quality versions of the mainstays of their area, butter and cheese, Ferruccio Rovagnati and his son Paolo founded the company. They had no clue that prosciutto would become their claim to fame.

Paolo convinced his father to start experimenting with salumi and prosciutti manufacturing in the 1960s, during the height of the economic boom. The curious son was looking at cutting-edge manufacturing methods. It occurred to him that they might produce an excellent cooked ham (prosciutto cotto), which was traditionally considered inferior to its raw counterpart, the crudo.

They say the rest is history. Paolo helped to build and extend his father’s business thanks to their long-standing commitment and loyalty to their clientele, finally taking over the firm in 1968. Since then, the Lombardia-based firm has grown and gained a worldwide reputation and significance. The Italian company is known for its cutting-edge technology, commitment to quality and innovation, and its trademark product, Gran Biscotto.

The Gran Briscotto

Paolo had a vision in the early 1970s to create a unique and premium-grade prosciutto cotto. After many years of testing raw ingredients and manufacturing procedures, he developed the very first iterations of what is now known as Gran Biscotto.

Gran biscotto translates to “large biscuit” in Italian. Paolo knew that his loving wife Claudia would be the harshest critic of his new premium ham, so he handed it to her to try. When you eat something extraordinary in Milan, you usually exclaim, “come un biscotto,” meaning, “it’s like a cookie.” Claudia was so pleased with Paolo’s prosciutto that she exclaimed, “This is not a biscuit; it is a magnificent biscuit!” 

Rovagnati’s Gran Biscotto prosciutto cotto is cooked gently for 12 hours before resting for up to 4 weeks. Before cooking, hog legs are painstakingly hand-boned and rubbed for up to 72 hours with a proprietary combination of herbs and spices! The result? A juicy, delicate prosciutto cotto with a unique taste and fragrance.

Paolo came up with the brilliant idea of fire branding their premium prosciutto with the term Gran Biscotto a few years after it was named. This slight change in manufacturing allowed their product to stand out from the crowd and remain at the forefront of their consumers’ thoughts.
